Fascinating read! I’m Harrison, an ex fine dining industry line cook. My stack "The Secret Ingredient" adapts hit restaurant recipes (mostly NYC and L.A.) for easy home cooking.
As someone who goes to Japan nearly every year and went to high school in Japan, way back in the day (and spent 6 years living in Tokyo), I’d be glad to send you some suggestions on your next trip. Your article has some great practical advice, including getting a Suica card, which can not only be used for public transportation, but at convenience stores, vending machines, etc.
I recommend Kurashiki and when in Nagoya, eat Hitsumabushi (eel).
I like Yokohoma too. Easy to commute from Tokyo, and I believe it is worth a visit.
I’m planning a trip to Japan in 2026 so this all sounds very interesting & useful. Thank you!
